I’m reeally into baking these days. Started off with Cupcakes, Lemon Drizzle Cake and Vanilla Muffins. But my best ones so far have been chocolate muffins. I have combined a few different recipe’s and come up with my own which I thought I would share with you:
- 250g self-raising flour
- 25g cocoa powder
- 2tsp baking powder
- 200g caster sugar
- 175ml milk
- 2 large eggs, beaten
- 100ml sunflower oil
- 75g milk/white/plain chocolate chunks
- 1-2tsp vanilla extract
The first time I cooked them I forgot to put the oil in but they turned out just fine so you can be a lil healthy and not put the oil in, but the oil keeps them moist and fresher for longer so I would say go on use the oil!
I like to add chunks of choc, hazelnuts, dried fruit etc. Mixing and matching is a favourite of mine so why not use it in food? They taste the best when they are just warm out of the oven so go on indulge. Great to bake with the credit crunch n all that
Cook them for 20-25 mins at about 170 degrees and they should turn out like this… voila:
